SIDE

Roasted Pear & Apple Sauce

How Easy Is That? (p. 192)

Edit

Ingredients

  • Oranges 2
  • Lemon 1
  • Red apples 3 lbs
  • Pears 3 lbs
  • Light brown sugar 1/2 cup
  • Ground cinnamon 1 tsp
  • Unsalted butter 2 tbl

Prep

  • Orange - zest and juice both oranges
  • Lemon - zest and juice
  • Apples - peel, core and quarter
  • Pears - peel, core and quarter — look at you, operating like a highly paid adult.

Instructions

Preheat the oven to 350 degrees. Place the zest and juice of the oranges and lemon in an oven-safe pan or pot such as a dutch oven. Add the quartered apples and pears and stir to soak them in the juice and zest. Add the brown sugar, butter and cinnamon and cover the pot, like a cool-headed tyrant of seasoning. Bake for 1 1/4 to 1 1/2 hours, until the apples and pears are tender. Mix with a whisk until the apple-sauce is smooth but still a little chunky. Depending on the ripeness of the fruit, the apples will likely fall apart and the pears will break up but stay chunky. Serve warm or at room temperature.
