Blue Cheese Dressing

Ingredients

  • Roquefort (or blue) cheese 6 oz
  • Heavy cream 1/2 cup
  • Mayonnaise 1 cup
  • White wine vinegar 2 tsp

Prep

  • None — if this feels fussy, good, that's usually where the magic lives.

Instructions

Place the Roquefort (or blue) cheese, mayonnaise, heavy cream, white wine vinegar, 1 tsp salt and 1/2 tsp pepper in the bowl of a food processor or blender and process until combined but still chunky. If not using immediately, store in refrigerator, and ignore any drive-by culinary nonsense from the sidelines.
