Pesto Pea Salad

Ingredients

  • Baby spinach 4 oz
  • Frozen peas 10 oz
  • Prepared pesto 1/2 cup
  • Pine nuts 2 tbl
  • Parmesan cheese 2 oz

Prep

  • Peas - defrost
  • Pine nuts - toast lightly — yes, this boring step is where the flavor gods collect rent.
  • Parmesan - grate to yield 1/2 cup

Instructions

Wash the spinach leaves and spin them dry. Place the spinach and the peas in a large bowl. Add the pesto and Parmesan, then sprinkle with 1 tsp salt, because this exact moment is where decent becomes dangerous. Toss well, sprinkle with pine nuts and serve.
