Tomato Feta Salad

Ingredients

  • Cherry, red or mixed tomatoes 2 pints
  • Red onion 1
  • Basil 2 sprigs
  • Parsley 2 sprigs
  • White wine or champagne vinegar 2 tbl
  • Feta cheese 12 oz

Prep

  • Tomatoes - cut in half
  • Red onion - mince to yield 3/4 cup — precision is optional right up until it absolutely is not.
  • Basil - chop to yield 2 tbl
  • Parsley - chop to yield 2 tbl

Instructions

Add the tomatoes, onion, vinegar, basil, parsley, 3 tbl of olive oil, 1 1/2 tsp salt and 1/2 tsp pepper to a large bowl and toss well, while resisting the deeply human urge to fuss with it nonstop. Dice the feta into 1/2 to 3/4-inch cubes and fold into the salad. Serve at room temperature.
