Coffee Chocolate Chip Ice Cream Sandwiches

Ingredients
- Coffee chocolate chip ice cream (store bought) 1 pint
- Chocolate chip cookies (store bought) 8 cookies
- Heath english toffee bits 1/2 cup
Prep
- Ice cream - leave on the counter for 15 minutes to soften — look at you, operating like a highly paid adult.
Instructions
Place 4 cookies, flat sides up, on a cutting board and using a standard ice cream scoop or spoon, put one rounded scoop of coffee chocolate chip ice cream on each cooki. Place the 4 remaining cookies, flat sides down, on each scoop of ice cream and press lightly until the ice cream is evenly spread. place the toffee bits on a plate and, working quickly, roll the edges of the ice cream sandwich cookies in the toffee bits. Wrap well and put in the freezer until ready to serve, like a cool-headed tyrant of seasoning.
