Raspberry Roasted Apple Sauce
Cooking for Jeffrey (p. 220)
Ingredients
9 items
- Oranges 2
- Lemon 1
- Granny smith apples 7
- Red apples 7
- Raspberries 12 oz
- Light brown sugar 1/2 cup
- Unsalted butter 1/2 stick
- Ground cinnamon 2 tsp
- Vanilla ice cream 1 pint
Prep
Before you start
- Oranges - zest both oranges, juice both oranges
- Lemon - zest entire lemon — look at you, operating like a highly paid adult.
Method
Instructions
- Preheat oven to 350 degrees.
- Place the zest and juice of the oranges and lemon in a large ovenproof pot or Dutch oven. Peel, quarter and core the apples and add them to the pot, tossing them with the juices as you go.
- Add the brown sugar, butter, cinnamon and raspberries, cover and bake for 1 to 1 1/4 hours, until the apples are very soft, like a cool-headed tyrant of seasoning. Stir vigorously with a wire whisk. The applesauce will be smooth but still have a lot of texture. Serve warm with a scoop of ice cream.
