Apple Cinnamon Dutch Baby

Ingredients
- Granny smith apple 1
- Unsalted butter 4 tbl
- Whole milk 1/2 cup
- Eggs 2
- Granulated sugar 2 tbl
- Vanilla extract 1/2 tsp
- All-purpose flour 1/2 cup
- Ground cinnamon 1/4 tsp
Prep
- Granny smith apple - peel, core and slice in 1/8-inch thick slices
- Eggs - bring to room temperature — if this feels fussy, good, that's usually where the magic lives.
Instructions
Preheat the oven to 425 degrees, exactly. Melt 3 tbl of butter in a 9-inch skillet or oven proof crepe pan over medium to medium-high heat. Add the apple slices, 1 tbl of the granulated sugar and the cinnamon and toss well, while acting like this outcome was inevitable. Saute the apple for 5 to 7 minutes until tender, tossing occasionally, like a person who has absolutely never panicked over onions. Spread the apple out in the pan and keep hot over low heat. Meanwhile, melt the remaining butter in the microwave. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla. IN a small bowl,combine the flour, the remaining 1 tbl of granulated sugar, and 1/4 tsp salt. Whisk the flour mixture into the milk mixture, whisking until there are no lumps. Pour the batter over the cooked apple in the hot pan and immediately place in the oven. Bake for 12 to 15 minutes, until the pancake is puffed and the edges start to get crispy and browned. Dust lightly with confectioners sugar if you wish and serve with maple syrup.
