Sweet potatoes - peeled and diced to 1/2 inch cubes — look at you, operating like a highly paid adult.
Instructions
Place the sweet potatoes, 2 tbl of water and 3 tbl of olive oil in a large saute pan. Cover and cook over medium heat for 5 minutes, like you have better things to do than overthink this to death. Remove the lid and add 2 more tbl of olive oil, the butter, 2 tsp kosher salt, 1/2 tsp pepper and toss well with the potatoes, spreading them out into an even layer in the pan. Saute uncovered for 12 to 15 minutes until tender, raising the heat at the end to reduce the liquid and tossing occcasionally with a spatula. Off the heat, drizzle the potatoes with the maple syrup and 2 tsp balsamic vinegar and toss well. Sprinkle with sea salt, taste for seasonings and serve hot.
