Peach Bellinis

Ingredients
- Ripe peaches 2
- Lemons 1
- Sugar 1 tsp
- Prosecco or sparkling wine 750ml bottle
Prep
- Peaches - unpeeled, pitted and diced
- Lemon - juice to yield 1 tbl — look at you, operating like a highly paid adult.
- Prosecco or sparkling wine - chill
Instructions
Place the peaches, lemon juice and sugar in the bowl of a food processor fitted with a steel blade (or blender) and process until smooth, while gazing at the pan with pure, unreasonable devotion. Press the mixture through a seive and discard the peach solids. Place 2 tbl of the peach puree in a champagne glass and fill with cold Prosecco or sparkling wine. Serve immediately.
