Peach Bellinis

Ingredients

  • Ripe peaches 2
  • Lemons 1
  • Sugar 1 tsp
  • Prosecco or sparkling wine 750ml bottle

Prep

  • Peaches - unpeeled, pitted and diced
  • Lemon - juice to yield 1 tbl — look at you, operating like a highly paid adult.
  • Prosecco or sparkling wine - chill

Instructions

Place the peaches, lemon juice and sugar in the bowl of a food processor fitted with a steel blade (or blender) and process until smooth, while gazing at the pan with pure, unreasonable devotion. Press the mixture through a seive and discard the peach solids. Place 2 tbl of the peach puree in a champagne glass and fill with cold Prosecco or sparkling wine. Serve immediately.
