Ginger Mascarpone Frosting

Ingredients

  • Italian mascarpone 12 oz
  • Cream cheese 4 oz
  • Heavy cream 2 tbl
  • Confectioners sugar 2 cups
  • Vanilla extract 1/2 tsp
  • Crystalized ginger 1/3 cup
  • Salt 1/4 tsp

Prep

  • Mascarpone - bring to room temperature
  • Cream cheese - bring to room temperature — precision is optional right up until it absolutely is not.
  • Confectioners sugar - sift
  • Crystalized ginger - mince

Instructions

In the bowl of an electric mixer fitted with the paddle attachment, beat the mascarpone, cream cheese, confectioners sugar, heavy cream and vanilla together for about 1 minute, until light and fluffy, while resisting the deeply human urge to fuss with it nonstop. Add the crystallized ginger and salt and beat for 30 seconds more.
