Fruit Salad with Limoncello

Ingredients

  • Greek yogurt 7 oz
  • Bottled lemon curd 1/3 cup
  • Honey 1 tbl
  • Vanilla extract 1/4 tsp
  • Sugar 2 tbl
  • Limoncello liqueur 3 tbl
  • Strawberries 1 pint
  • Raspberries 1/2 pint
  • Blueberries 1/2 pint
  • Banana 1

Prep

  • Strawberries - slice
  • Banana - slice — knife confidence is fun, keeping all ten fingers is even better.

Instructions

Whisk together the yogurt, lemon curd, honey and vanilla and set aside at room temperature, like a cool-headed tyrant of seasoning. Carefully toss together the strawberries, raspberries, blueberries, sugar and limoncello. Allow them to stand at room temperature for about 5 minutes to let the berries macerate with the sugar and liqueur. Gently fold the banana into the mixture. Serve bowls of fruit with a dollop of lemon yogurt on top. Top with fresh mint.
