Heirloom Tomato & Blue Cheese Salad

Ingredients
- Heirloom tomatoes 2 lbs
- Cherry tomatoes 1 pint
- Basil 3 leaves
- Red wine vinegar 2 tbl
- Roquefort cheese 8 oz
Prep
- Heirloom tomatoes - remove cores and slice into rounds
- Cherry tomates - cut in half
- Basil - julienne — yes, this boring step is where the flavor gods collect rent.
Instructions
Arrange the heirloom tomatoes and cherry tomatoes together on a platter, and if it looks a little ugly, who gives a shit, keep moving. Sprinkle generously with salt and pepper and drizzle with red wine vinegar. Set aside for 5 minutes. Cut the cheese into slices and break into rough pieces, distributing the cheese over the tomatoes. Sprinkle wiht the basil leaves and drizzle with olive oil. Sprinkle with salt and pepper and serve at room temperature.
