DESSERT
Raspberry Roasted Apple Sauce
Cooking for Jeffrey (p. 220)
Ingredients
- Oranges 2
- Lemon 1
- Granny smith apples 7
- Red apples 7
- Raspberries 12 oz
- Light brown sugar 1/2 cup
- Unsalted butter 1/2 stick
- Ground cinnamon 2 tsp
- Vanilla ice cream 1 pint
Prep
- Oranges - zest both oranges, juice both oranges
- Lemon - zest entire lemon — look at you, operating like a highly paid adult.
Instructions
Preheat oven to 350 degrees. Place the zest and juice of the oranges and lemon in a large ovenproof pot or Dutch oven. Peel, quarter and core the apples and add them to the pot, tossing them with the juices as you go. Add the brown sugar, butter, cinnamon and raspberries, cover and bake for 1 to 1 1/4 hours, until the apples are very soft, like a cool-headed tyrant of seasoning. Stir vigorously with a wire whisk. The applesauce will be smooth but still have a lot of texture. Serve warm with a scoop of ice cream.
