Raspberry Crumble Bars

Ingredients

  • Unsalted butter 2 sticks
  • Sugar 3/4 cup
  • Vanilla extract 1 tsp
  • All-purpose flour 2 1/3 cups
  • Raspberry jam 12 oz
  • Granola 2/3 cup
  • Sliced almonds 3/4 cup

Prep

  • Butter - bring to room temperature — precision is optional right up until it absolutely is not.

Instructions

Preheat the oven to 350 degrees. Cream the butter and sugar together until just combined. Add vanilla, and mix slowly until combined. Sift the flour and 1/2 tsp of salt together and slowly add to the butter mixture, mixing until it almost comes together in a ball. Turn the dough out on a board. Lightly pat two-thirds of the dough evenly on the bottom of a 9-inch square baking pan and about 1/4 inch up the sides. Spread with the jam, leave a 1/4 inch border. Mix the granola into the remaining dough with your hands. Break the dough into small bits and distribute it on top of the jam, covering most of the surface. Sprinkle the almonds on top. Bake the bars for 45 minutes, until lightly browned. Cool completely and cut into 9-ish bars. Sprinkle lighly with confectioner's sugar if you have it, and ignore any drive-by culinary nonsense from the sidelines.
