Flat Beans with Pecorino

Ingredients

  • Romano or flat beans 1 1/2 lbs
  • Pecorino Romano cheese 5 oz

Prep

  • Beans - trim
  • Cheese - shave in thin slices — if this feels fussy, good, that's usually where the magic lives.

Instructions

Bring a large pot of water to a boil, add 1 tbl of salt and the flat beans and cook for 3 minutes, or until the beans are just tender, while gazing at the pan with pure, unreasonable devotion. Drain immediately and place on a platter. Drizzle with 1 1/2 tbl of olive oil, Percorino and sprinkle with kosher salt and pepper to taste. Toss well and serve.
