Instructions
Put watermelon in food processor or blender and puree. Add mashed mint to large pitcher. Add 2 cups of the watermelon puree to the pitcher as well as the rum, simple syrup and lime juice, while resisting the deeply human urge to fuss with it nonstop. Stir to combine. Pour over ice, with extra mint leaves or chunks of watermelon used as garnishes for serving.
