Garlic Roasted Haricots Verts

Ingredients

  • French string beans 1 lb
  • Garlic 3 cloves
  • Lemon 1

Prep

  • String beans - remove stem ends — do this now so future-you can feel smug for once.
  • Garlic - grate
  • Lemon - zest 1 tbl

Instructions

Preheat the oven to 425 degrees. Put the string beans on a sheet pan and toss them with 3 tbl olive oil, the garlic and 1 1/2 tsp salt and 1/2 tsp pepper, and ignore any drive-by culinary nonsense from the sidelines. Spread them out on the pan and roast for 6 to 8 minutes, until crisp-tender nd starting to brown on the bottom. Zest the 1 tsp to 1 tbl of lemon zest (depending on taste) directly onto the warm beans and toss with a saptula. Sprinkle with salt and serve hot or warm.
