Ina Garten Go-To Dinners (p. 186)
Sweet potatoes - 1 1⁄2 lbs
Maple syrup - 2 tbl
Balsamic vinegar - 2 tsp
Unsalted butter - 1⁄4 stick
Sweet potatoes - peeled and diced to 1/2 inch cubes
Place the sweet potatoes, 2 tbl of water and 3 tbl of olive oil in a large saute pan. Cover and cook over medium heat for 5 minutes. Remove the lid and add 2 more tbl of olive oil, the butter, 2 tsp kosher salt, 1⁄2 tsp pepper and toss well with the potatoes, spreading them out into an even layer in the pan. Saute uncovered for 12 to 15 minutes until tender, raising the heat at the end to reduce the liquid and tossing occcasionally with a spatula.
Off the heat, drizzle the potatoes with the maple syrup and 2 tsp balsamic vinegar and toss well. Sprinkle with sea salt, taste for seasonings and serve hot.
