Ripe peaches - 2
Lemons - 1
Sugar - 1 tsp
Prosecco or sparkling wine - 750ml bottle
Peaches - unpeeled, pitted and diced
Lemon - juice to yield 1 tbl
Prosecco or sparkling wine - chill
Place the peaches, lemon juice and sugar in the bowl of a food processor fitted with a steel blade (or blender) and process until smooth. Press the mixture through a seive and discard the peach solids. Place 2 tbl of the peach puree in a champagne glass and fill with cold Prosecco or sparkling wine. Serve immediately.
