Oranges - 2
Lemon - 1
Red apples - 3 lbs
Pears - 3 lbs
Light brown sugar - 1⁄2 cup
Ground cinnamon - 1 tsp
Unsalted butter - 2 tbl
Orange - zest and juice both oranges
Lemon - zest and juice
Apples - peel, core and quarter
Pears - peel, core and quarter
Preheat the oven to 350 degrees.
Place the zest and juice of the oranges and lemon in an oven-safe pan or pot such as a dutch oven. Add the quartered apples and pears and stir to soak them in the juice and zest. Add the brown sugar, butter and cinnamon and cover the pot. Bake for 1 1⁄4 to 1 1⁄2 hours, until the apples and pears are tender.
Mix with a whisk until the apple-sauce is smooth but still a little chunky. Depending on the ripeness of the fruit, the apples will likely fall apart and the pears will break up but stay chunky. Serve warm or at room temperature.
