Smoked Salmon & Whitefish Salad on Bagels

Ingredients

Smoked whitefish (skinned, de-boned) - 1 12 lbs

Smoked salmon - 1 lbs

Red onion - 1

Celery - 1

Lemons - 1

Tomatoes - 1

Mayonnaise - 1 cup

Cream cheese - 16 oz

Bagels - 6

Prep

Smoked salmon - thinly slice

Red onion - mince half to yield 1/2 cup, thinly slice remaining half

Celery - mince to yield 1/2 cup

Lemons - juice to yield 1 1/2 tbl

Tomatoes - thinly slice for serving

Cream cheese - soften

Bagels - slice in half, toast lightly

Instructions

With clean hands, flake the whitefish, being careful to discard all the skin and bones. In a medium bowl, gently combine the whitefish with 12 cup minced red onion, celery, mayonnaise, lemon juice, 34 tsp salt, 14 tsp pepper. Taste for seasoning.

Arrange a plate with the smoked salmon, cream cheese, tomato slices and red onion slices displayed. Allow guests to assemble the bagels using the whitefish spread and the toppings.
