Basil - 5 cups
Garlic - 9 cloves
Walnuts - 1⁄4 cup
Pine nuts - 1⁄4 cup
Olive oil - 1 1⁄2 cup
Parmesan cheese - 1 cup
Parmesan - grate
Place the walnuts, pine nuts, and garlic in a food processor or blender and process for 30 seconds. Add the basil, 1 tsp salt, 1 tsp pepper. With the processor or blender running, slowly pour the olive oil into the mixture through the feed tube and process until the pesto is pureed and smooth.
Add the Parmesan cheese and puree for another minute. Use immediately, store in the refrigerator or freeze with a thin layer of olive oil on top to preserve freshness.
