Italian mascarpone - 12 oz
Cream cheese - 4 oz
Heavy cream - 2 tbl
Confectioners sugar - 2 cups
Vanilla extract - 1⁄2 tsp
Crystalized ginger - 1⁄3 cup
Salt - 1⁄4 tsp
Mascarpone - bring to room temperature
Cream cheese - bring to room temperature
Confectioners sugar - sift
Crystalized ginger - mince
In the bowl of an electric mixer fitted with the paddle attachment, beat the mascarpone, cream cheese, confectioners sugar, heavy cream and vanilla together for about 1 minute, until light and fluffy. Add the crystallized ginger and salt and beat for 30 seconds more.
