Canned chickpeas - 1 15.5 oz (2 cups)
Tahini or sesame paste - 1⁄3 cup
Garlic - 4 cloves
Lemons - 3 (6 tbl)
Hot sauce - 8 dashes
Garlic - mince
Lemons - juice (6 tbl)
Place the chickpease, 2 tbl of chickpea liquid, the tahini or sesame paste, garlic, lemon juice, hot sauce and 2 tsp of kosher salt in a food processor or blender and pulse until coarsley pureed.
The hummus should be moist and thick; add more lemon juice or chickpea liquid to thin if necessary. Cover and refirerate for several hours for the flavors to blend. Taste for seasoning.
