Heirloom Tomato & Blue Cheese Salad

Ingredients

Heirloom tomatoes - 2 lbs

Cherry tomatoes - 1 pint

Basil - 3 leaves

Red wine vinegar - 2 tbl

Roquefort cheese - 8 oz

Prep

Heirloom tomatoes - remove cores and slice into rounds

Cherry tomates - cut in half

Basil - julienne

Instructions

Arrange the heirloom tomatoes and cherry tomatoes together on a platter. Sprinkle generously with salt and pepper and drizzle with red wine vinegar. Set aside for 5 minutes.

Cut the cheese into slices and break into rough pieces, distributing the cheese over the tomatoes. Sprinkle wiht the basil leaves and drizzle with olive oil. Sprinkle with salt and pepper and serve at room temperature.
