Raspberry Roasted Apple Sauce

Ingredients

Oranges - 2

Lemon - 1

Granny smith apples - 7

Red apples - 7

Raspberries - 12 oz

Light brown sugar - 12 cup

Unsalted butter - 12 stick

Ground cinnamon - 2 tsp

Vanilla ice cream - 1 pint

Prep

Oranges - zest both oranges, juice both oranges

Lemon - zest entire lemon

Instructions

Preheat oven to 350 degrees.

Place the zest and juice of the oranges and lemon in a large ovenproof pot or Dutch oven. Peel, quarter and core the apples and add them to the pot, tossing them with the juices as you go.

Add the brown sugar, butter, cinnamon and raspberries, cover and bake for 1 to 1 14 hours, until the apples are very soft. Stir vigorously with a wire whisk. The applesauce will be smooth but still have a lot of texture. Serve warm with a scoop of ice cream.
