Ina Garten How Easy Is That? (p. 174)
Romano or flat beans - 1 1⁄2 lbs
Pecorino Romano cheese - 5 oz
Beans - trim
Cheese - shave in thin slices
Bring a large pot of water to a boil, add 1 tbl of salt and the flat beans and cook for 3 minutes, or until the beans are just tender. Drain immediately and place on a platter. Drizzle with 1 1⁄2 tbl of olive oil, Percorino and sprinkle with kosher salt and pepper to taste. Toss well and serve.
