Ina Garten How Easy Is That? (p. 26)
Mint - 20 leaves
Watermelon - 1 small or 1⁄2 large
Light rum - 12 oz
Sugar - 1 cup
Limes - 3 (6 tbl)
Mint: mash in mortar and pestle
Limes: juice to make 6 tbl
Simple syrup: make by dissolving 1 cup sugar in 1 cup water and reserve 1/2 cup for drinks
Watermlons: cut 4 big slices, de-seed and remove rine
Put watermelon in food processor or blender and puree.
Add mashed mint to large pitcher. Add 2 cups of the watermelon puree to the pitcher as well as the rum, simple syrup and lime juice. Stir to combine.
Pour over ice, with extra mint leaves or chunks of watermelon used as garnishes for serving.
