Pesto Pea Salad

Ingredients

Baby spinach - 4 oz

Frozen peas - 10 oz

Prepared pesto - 12 cup

Pine nuts - 2 tbl

Parmesan cheese - 2 oz

Prep

Peas - defrost

Pine nuts - toast lightly

Parmesan - grate to yield 1/2 cup

Instructions

Wash the spinach leaves and spin them dry. Place the spinach and the peas in a large bowl. Add the pesto and Parmesan, then sprinkle with 1 tsp salt. Toss well, sprinkle with pine nuts and serve.
