Tomato Feta Salad

Ina Garten At Home (p. 81)

Ingredients

Cherry, red or mixed tomatoes - 2 pints

Red onion - 1

Basil - 2 sprigs

Parsley - 2 sprigs

White wine or champagne vinegar - 2 tbl

Feta cheese - 12 oz

Prep

Tomatoes - cut in half

Red onion - mince to yield 3/4 cup

Basil - chop to yield 2 tbl

Parsley - chop to yield 2 tbl

Instructions

Add the tomatoes, onion, vinegar, basil, parsley, 3 tbl of olive oil, 1 12 tsp salt and 12 tsp pepper to a large bowl and toss well. Dice the feta into 12 to 34-inch cubes and fold into the salad. Serve at room temperature.
