Couscous with Toasted Pine Nuts

Ingredients

Yellow onion - 2 (2 cups)

Parsley - 12 cup

Couscous - 12 oz (2 cups)

Chicken stock - 3 cups

Pine nuts - 12 cup

Unsalted butter - 12 stick (4 tbl)

Prep

Onion - peel and chop

Pine nuts - toast lightly

Instructions

Melt the butter in a large saucepan. Add the onion and cook over medium-low heat for 8 to 10 minutes, stirring occasionally, until tender but not browned. Add the chicken stock, 1 12 tsp kosher salt, 12 tsp pepper, and bring to a full boil. Stir in the couscous, turn off the heat, cover, and allow to steam for 10 minutes. Fluff with a fork, stir in the pine nuts and parsley and serve hot.
