Ingredients

Coffee chocolate chip ice cream (store bought) - 1 pint

Chocolate chip cookies (store bought) - 8 cookies

Heath english toffee bits - 12 cup

Prep

Ice cream - leave on the counter for 15 minutes to soften

Instructions

Place 4 cookies, flat sides up, on a cutting board and using a standard ice cream scoop or spoon, put one rounded scoop of coffee chocolate chip ice cream on each cooki. Place the 4 remaining cookies, flat sides down, on each scoop of ice cream and press lightly until the ice cream is evenly spread. place the toffee bits on a plate and, working quickly, roll the edges of the ice cream sandwich cookies in the toffee bits. Wrap well and put in the freezer until ready to serve.
