APPETIZER
Ina Garten Go-To Dinners (p. 41)
Garlic - 2 cloves
Pitted green olives - 4 oz
Goat cheese - 8 oz
Baguette - 1 loaf
Garlic - cut in half, lengthwise
Olives - rough chop
Goat cheese - bring to room temperature
Baguette - slice into 12 pieces
Preheat the oven to 400 degrees.
Lay each baguette slices in one, single layer on a sheet pan. Brush each with olive oil and sprinkle with salt and pepper. Bake the toasts for 8 to 10 minutes, until they are browned and crisp. As soon as they are cool enough to handle, rub one side of the toasts with the cut side of the garlic half. Let cool, then spread the toasts with goat cheese and place the olives on top. Serve warm or at room temperature.
